Ginger Butter Salmon on a Plank

EQUIPMENT

INGREDIENTS

  • 1 filet of Eva's Wild Sockeye Salmon
  • 1/2 c salted butter at room temperature
  • 1t lime zest
  • 1t lemon zest
  • 2T lime juice
  • 2T lemon juice
  • 2T grated ginger
  • Olive oil
  • Salt and Pepper to taste

DIRECTIONS

  1. Soak the Eva's Wild grill plank in water for 1-2 hours.
  2. Remove the pin bones from the fish if you've bought pin-bone-in salmon.
  3. Combine the butter, lime zest, lemon zest, lime juice, lemon juice and grated ginger into a paste.
  4. Season the salmon with salt, pepper and a drizzle of olive oil. 
  5. Pre-heat your grill plank on a medium-hot grill. 
  6. Place your salmon on the heated grill plank and cover the grill. Cook for 10 minutes or until the salmon's internal temperature is around 120F - it will continue to cook after you remove it from the grill so by cooking it to 120F it will keep it from drying out.
  7. Smear the butter mixture on the salmon and close the grill cover for until the butter has melted. 
  8. Serve hot or at room temperature with your favorite sides.
