Ginger Butter Salmon on a Plank

EQUIPMENT
- Eva's Wild Grill Plank
- Grill
INGREDIENTS
- 1 filet of Eva's Wild Sockeye Salmon
- 1/2 c salted butter at room temperature
- 1t lime zest
- 1t lemon zest
- 2T lime juice
- 2T lemon juice
- 2T grated ginger
- Olive oil
- Salt and Pepper to taste
DIRECTIONS
- Soak the Eva's Wild grill plank in water for 1-2 hours.
- Remove the pin bones from the fish if you've bought pin-bone-in salmon.
- Combine the butter, lime zest, lemon zest, lime juice, lemon juice and grated ginger into a paste.
- Season the salmon with salt, pepper and a drizzle of olive oil.
- Pre-heat your grill plank on a medium-hot grill.
- Place your salmon on the heated grill plank and cover the grill. Cook for 10 minutes or until the salmon's internal temperature is around 120F - it will continue to cook after you remove it from the grill so by cooking it to 120F it will keep it from drying out.
- Smear the butter mixture on the salmon and close the grill cover for until the butter has melted.
- Serve hot or at room temperature with your favorite sides.
